Healthy Fajitas – a la chef Dr. Robert Woodbury

INGREDIENTS:

  • 1 Lb. organic chicken tenders (3-4 oz per person)
  • 3 Tbs olive oil
  • 1 white onion, sliced 1/2” thick pieces
  • 1 orange, red and green bell pepper, rough chop
  • 2 cloves garlic, minced
  • ½ tsp smoky paprika
  • ½ tsp sugar
  • ¼ tsp cayenne pepper
  • ½ tsp smoky paprika
  • ¼ tsp salt and pepper
  • 1 ½ tsp cumin

DIRECTIONS:

In a small bowl combine the cumin, cayenne pepper, smoky paprika, sugar, salt and pepper. Rub theseasonings liberally to fully coat the raw chicken.In a large skillet, add 2 Tbs olive oil and set the flame to medium-high heat. Add the chicken and cook for5-8 minutes or until the chicken is fully cooked (should look opaque all the way through and slightly browned on the outside). Set the chicken aside.

In the same skillet, add 1 Tbs olive oil. Toss in the onion and bell pepper and cook for 6-7 minutes or until al dente. Add in the minced garlic and continue to sauté for 2 more minutes. Add the chicken back into the vegetable stir-fry and cook until the mixture is hot.

Optional: 1)Toss the fajitas on a bed of lettuce to make a Fajita Salad.

2) Chop the leftovers and make it into an egg scramble for a meal the next day.
